How to Use It
- Sauté and pan-cook. Use it for eggs, vegetables, garlic, onions and the beginning of a sauce.
- Roast. Coat potatoes, seasonal vegetables, chicken or fish before placing them in the oven.
- Grill. Brush it over vegetables, seafood or meat before grilling.
- Build. Use it as the starting fat for soffritto, ragù, soups, sauces and braises.
- Dress and finish. Serve it raw over salads, bread, pasta, vegetables or soup. When a dish calls for truffle aroma, cook with this oil first and add White Truffle Oil or Black Truffle Oil after removing the food from the heat.
Storage matters as much as use. Keep the bottle cool, dark and sealed . The dark glass helps protect the oil from direct light.

Can I cook with this olive oil?
Yes—that is what it is for. This is the Milan Truffle bottle made for sautéing, roasting, grilling, searing and everyday cooking. Our White and Black Truffle Oils are finishing oils; this one does the cooking.
What is the difference between this and your truffle oils?
This is 100% extra virgin olive oil: one ingredient, 500 mL, made for cooking. The truffle oils are 250 mL extra virgin olive oil finished with natural truffle aroma. Heat fades truffle aroma, so the truffle oils are added at the end of a dish, off the heat. Cook with this; finish with those.
What does “Cold Extraction” mean?
Cold Extraction means the oil is extracted mechanically at controlled low temperature rather than through heat-driven processing. It is the process stated on the front label.
