Fresh White Truffle — Tuber Magnatum Pico
Tuber magnatum Pico is sourced from the forests of Alba, Piedmont, Italy — the only region in the world producing this species at true commercial quality. Its season runs from October through December. What arrives is wild, rare, and irreplaceable.
Shave directly over warm pasta, risotto, fried eggs, or fonduta immediately before service — heat is the enemy of its aroma. For a year-round white truffle experience, explore the White Truffle Oil or the Carpaccio of Summer Truffle. Compare species with the Black Truffle Tuber Melanosporum and Autumn Truffle Tuber Uncinatum.
Why Tuber Magnatum Pico
No other truffle species produces the complex, intensely aromatic profile of Tuber magnatum Pico. Its scarcity, inability to be cultivated, and narrow seasonal window make it the benchmark against which all other truffles are measured. For serious kitchens, sourcing fresh white truffle from Alba is a statement of culinary intent.
Usage
Use a truffle shaver or mandoline to create paper-thin slices. Apply only to dishes that are warm — not hot — to release aroma through gentle heat. Never cook. A 5–10 g portion per serving is standard for restaurant applications. Store wrapped in paper, refrigerated, and use within 5–7 days of receipt.
