Fresh Bianchetto Truffle — Tuber Borchii
Tuber borchii — the Bianchetto. A small white truffle native to central and northern Italy, harvested from January through April. Its aroma begins delicate and garlic-forward when young, intensifying into a more pungent, complex profile as it matures. A distinctive and underutilized species with strong character.
Shave raw over pasta, risotto, and eggs. For a year-round white truffle experience benchmarked against the standards of Alba, Piedmont, explore the White Truffle Oil. Compare with the White Truffle Tuber Magnatum Pico for the premium white truffle benchmark, or the Summer Truffle Tuber Aestivum for a milder seasonal option.
Why Tuber Borchii
Bianchetto fills the January–April window when white truffle season has closed and summer truffle has not yet arrived. For kitchens committed to featuring fresh truffle year-round, it is an essential seasonal rotation — offering a genuine white truffle experience at a more accessible price point than Tuber magnatum Pico.
Usage
Best served raw — its pungent aroma dissipates quickly with heat. Shave directly over warm dishes immediately before service. Use sparingly, as mature Bianchetto develops significant aromatic intensity. Store wrapped in paper, refrigerated, and use within 5 days of receipt.
