Balsamic vinegar for ice cream, the Italian condiment drizzled over vanilla gelato as a sweet-and-tangy finish, works two ways: a few drops straight from the bottle, or a quick reduction simmered for about 10 minutes and cooled. Milan Truffle's Balsamic Vinegar of Modena IGP, a Protected Geographical Indication vinegar from Italy, comes in a 250 mL bottle with a documented density and acidity.

Discover 12 tips for using balsamic vinegar for ice cream and Italian gelato.

1. Start with Vanilla Ice Cream

Vanilla ice cream, the plainest and most familiar base, lets the balsamic stand out. It is the best scoop for a first try.

2. Try Traditional Italian Vanilla Gelato

Gelato, Italian ice cream made with more milk and less cream than most American ice cream, has a lighter body that carries balsamic well. Fior di latte, a plain milk-and-sugar gelato, works the same way.

3. Add Fresh Strawberries

Balsamic strawberries, sliced strawberries tossed with a little balsamic and left to sit 10 to 15 minutes, can be spooned with their juices over the ice cream. For more, see our balsamic vinegar for strawberries.

4. Use Balsamic as a Finishing Drizzle

A finishing drizzle, a condiment added at the very end rather than mixed in, keeps the balsamic on the surface, where you taste it first.

5. Begin with Just a Few Drops

Start with 3 or 4 drops per scoop and taste. You can always add more; you cannot take it back.

6. Serve the Ice Cream Well Chilled

Firm, cold ice cream holds the drizzle on top. Soft, melting ice cream lets the balsamic run into the bowl.

7. Add Balsamic Immediately Before Serving

Drizzle at the table or just before the bowl leaves the kitchen, so the balsamic and the ice cream reach the spoon together.

8. Pair with Fresh Raspberries

Raspberries, tart berries with a natural acidity of their own, sit well beside balsamic over vanilla ice cream. Scatter them on top just before the drizzle.

9. Try It with Dark Chocolate Ice Cream

Dark chocolate ice cream, a deeper and less sweet base, takes a few drops of balsamic as a bright contrast. Use a light hand.

10. Add Toasted Pistachios for Texture

Toasted pistachios, roughly chopped and sprinkled over the scoop, add crunch and a savory note against the sweet-and-tangy balsamic.

11. Reduce It Only for a Syrupy Drizzle

A balsamic reduction, balsamic simmered until about half of it evaporates, gives a softer, sweeter drizzle. It is optional: drops straight from the bottle give a sharper contrast. The method is below.

12. Choose Balsamic Vinegar of Modena IGP with Documented Specifications

Our balsamic carries the IGP (Indicazione Geografica Protetta) name, Protected Geographical Indication in English, and our bottle's back label declares Country of Origin: Italy. Density is reported as 1.36, and acidity is 6%, the minimum total acidity set by the IGP specification. The bottle carries a kosher symbol. To see what the designation covers, read our guide to Balsamic Vinegar of Modena IGP.

How to Make a Balsamic Reduction for Ice Cream in 5 Steps

Balsamic reduction, balsamic vinegar simmered until about half of it evaporates and it turns syrupy, takes about 2 minutes to prepare, 8–12 minutes to simmer, and approximately 10 minutes to cool, and makes about ¼ cup (60 mL), enough for 8 to 12 scoops.

Ingredients:

  • ½ cup (120 mL) Balsamic Vinegar of Modena IGP
  • 1 tablespoon honey or sugar (optional)
  • Vanilla ice cream or gelato, for serving
  1. Measure. Pour the balsamic vinegar into a small saucepan, with the honey or sugar if using.
  2. Bring to a simmer. Heat over medium heat until small bubbles form around the edge, then lower the heat to keep a gentle simmer.
  3. Reduce. Simmer for 8 to 12 minutes, stirring now and then, until the vinegar has reduced by about half and coats the back of a spoon. Keep the kitchen ventilated; the vapors are sharp.
  4. Cool. Take the pan off the heat and let the reduction cool for about 10 minutes. It thickens further as it cools, so stop before it looks like syrup in the pan.
  5. Drizzle and serve. Spoon about 1 teaspoon (5 mL) over each scoop of ice cream and serve right away.

Quick version: skip the stove and add a few drops of balsamic straight from the bottle over each scoop.

Over-reduced balsamic hardens as it cools; if that happens, stir in a teaspoon of warm water.

How to Choose Balsamic Vinegar for Ice Cream: 3 Checks

  1. Look for the protected name. Balsamic Vinegar of Modena IGP or Traditional Balsamic Vinegar DOP appears in full on the label. A bottle labeled only "balsamic vinegar" is not covered by either specification.
  2. Look for measured specifications. Acidity and density are numbers you can compare; a published figure lets you choose on facts rather than adjectives.
  3. Match the vinegar to the use. A reduction uses balsamic by the half cup, which makes IGP the practical category. Traditional Balsamic Vinegar DOP, aged at least 12 years, is usually added by the drop at the table.

Frequently Asked Questions About Balsamic Vinegar for Ice Cream

Does balsamic vinegar go with ice cream?

Yes. A small amount of balsamic adds a sweet-and-tangy contrast to cold, sweet ice cream, much like a tart fruit sauce. Vanilla ice cream and plain gelato are the most common pairings.

What ice cream goes best with balsamic vinegar?

Vanilla ice cream and fior di latte gelato, because their plain flavor lets the balsamic stand out. Strawberry and dark chocolate ice cream also work with a lighter hand.

Do you need to reduce balsamic vinegar for ice cream?

No. A few drops straight from the bottle work well. A reduction, simmered for 8 to 12 minutes and cooled, gives a syrupy drizzle with a milder tang.

How much balsamic should you put on ice cream?

Start with 3 or 4 drops per scoop straight from the bottle, or about 1 teaspoon (5 mL) of reduction, then adjust to taste.

Can you serve balsamic strawberries with ice cream?

Yes. Toss sliced strawberries with a little balsamic vinegar, let them sit 10 to 15 minutes, and spoon them with their juices over vanilla ice cream.
