KEEP IT AWAY FROM LIGHT

Store olive oil in a dark cupboard or pantry, away from direct sunlight and strong light. Dark glass, stainless steel, and other light-protective containers help shield the oil while it is stored.

QUALITY MATTERS

Not every bottle of olive oil has the same composition. Cultivar, fruit maturity, processing, storage, time, and exposure to oxygen, light, and heat can all influence the compounds present in an extra virgin olive oil.

Not every olive oil belongs to the same grade. Olive oils are classified according to how they are produced and whether they meet specific chemical and sensory requirements.

EXTRA VIRGIN OLIVE OIL

Extra virgin is the highest commercial grade of virgin olive oil. It is obtained directly from olives using only mechanical or other physical processes under conditions that do not alter the oil.

To qualify as extra virgin, the oil must satisfy defined chemical parameters and be free from sensory defects, while presenting positive fruity characteristics.

VIRGIN OLIVE OIL

Virgin olive oil is also obtained directly from olives by mechanical or physical means, but its permitted chemical limits and sensory characteristics differ from those required for extra virgin grade.

LAMPANTE VIRGIN OLIVE OIL

Lampante is virgin olive oil that does not meet the requirements for direct retail consumption. It may have chemical characteristics outside the permitted limits, sensory defects, or both.

It is generally destined for refining rather than being sold directly as edible virgin olive oil.

REFINED OLIVE OIL

Refined olive oil is produced by refining virgin olive oils that require treatment to make them suitable for consumption. Refining reduces undesirable characteristics but also changes much of the aroma and flavor associated with virgin olive oil.

OLIVE OIL

The product sold simply as “olive oil” is generally a blend of refined olive oil and virgin olive oils suitable for consumption.

It is therefore not the same product category as extra virgin olive oil.

OLIVE-POMACE OIL

After olive oil extraction, the remaining olive material still contains a small quantity of oil. Oil recovered from this material is classified separately as olive-pomace oil and is subject to its own processing and commercial categories.

THE IMPORTANT DISTINCTION

“Olive oil” is not one single product.

Extra virgin, virgin, refined olive oil, olive oil, and olive-pomace oil represent different legal categories with different production methods and requirements.

Understanding the grade tells you what is actually inside the bottle.

Beyond grade, olive oil can be classified in several other ways. These classifications tell us about where the oil comes from, which olives were used, and how its origin or production is defined.

BY ORIGIN

An olive oil may identify a country, region, or more specific geographic area of origin. For consumers, origin answers a fundamental question: where does this oil come from?

BY CULTIVAR

Olive varieties are called cultivars. An oil produced predominantly or entirely from one cultivar is commonly described as monovarietal or monocultivar.

An oil made from more than one cultivar is a blend. Blending is not inherently an indication of lower quality; different cultivars may be combined intentionally to create a particular sensory profile.

BY GEOGRAPHICAL INDICATION

Some European olive oils carry protected geographical designations.

DOP / PDO — Protected Designation of Origin

Identifies products whose production, processing, and preparation are linked to a defined geographical area according to an established specification.

IGP / PGI — Protected Geographical Indication: Sicily, for example, has one regional IGP and six DOP zone

Also connects a product to a geographical area, but its requirements differ from those of DOP/PDO.

These designations describe origin and compliance with a specification. They are not separate grades of olive oil.

BY PRODUCTION METHOD

Terms describing extraction or production may also appear on labels, including references to mechanical extraction and temperature-controlled processing.

These terms describe how the oil was produced; they do not replace the legal grade.

BY ORGANIC CERTIFICATION

Organic olive oil is produced according to applicable organic agricultural and certification requirements.

“Organic” describes the production system. It does not constitute a separate olive-oil grade.

ONE BOTTLE, MULTIPLE CLASSIFICATIONS

A single bottle can therefore be:

Extra virgin by grade,

Italian by origin,

monovarietal or blended by cultivar composition,

DOP or IGP when certified under a geographical designation,

and organic when produced and certified according to organic standards.
