What Is Olio Nuovo?
Olio Nuovo is the Extra Virgin Olive Oil of the new harvest, enjoyed shortly after extraction when its fresh character is most pronounced.
It is a seasonal release tied to the annual olive harvest in Italy. Freshly milled oil tastes greener, more bitter and more peppery than it will a few months later — the pungency explained in why olive oil tastes peppery. Olio nuovo is a season, not a separate grade: it is still extra virgin olive oil, as set out in how Italian olive oil is classified.
Where Can You Buy Olio Nuovo in the US?
Milan Truffle brings olio nuovo from the 2026 Italian harvest to the United States. The new oil arrives in Miami in November and ships across the US in boxes of 3 or 6 bottles (500 mL each).

To experience Olio Nuovo at its freshest and most expressive, the ideal period is from late October through early December.
Open it within a few weeks and store it away from light and heat. Use it raw, poured over food at the end, the way Italians finish with olive oil.
