Looking for olive oil for baking? Lumìa is a 100% Italian early-harvest extra virgin olive oil for olive oil cake, citrus bakes, brownies and focaccia, with walnut husk, red apple and a peppery finish.
Baking with olive oil, using it in place of butter or neutral oil, gives cakes and muffins a moist, tender crumb and, with extra virgin olive oil, a flavor of its own. The right bottle depends on whether you want the oil to be tasted. Lumìa, early harvested in Fall 2025 and cold-extracted in Italy, is for bakes where it should be. Each 500 mL bottle is $55. For techniques and recipes, read our guide to baking with olive oil.
Aroma: walnut husk and red apple. Palate: wild chicory with a peppery finish.
7 Ways to Choose Our Olive Oil for Baking
1. Match the Oil's Intensity to the Recipe
Intensity, how strongly an oil's fruit, bitterness and pepper come through, decides whether it leads or supports; all three are positive attributes in the International Olive Council's sensory method. Lumìa's wild chicory bitterness and peppery finish suit citrus cakes, chocolate, nuts, spice cakes, gingerbread and savory bakes such as focaccia and herbed breads. Taste the oil before it goes into the batter: if you like it with the other ingredients, you will like it in the cake. For a delicate vanilla sponge where you want no olive flavor, a milder oil, or Lumìa for only part of the fat, is the better choice. For more on Lumìa's flavor, see our guide to the best tasting olive oil.
2. Choose Extra Virgin When the Oil Should Be Tasted
Extra virgin olive oil, the highest grade defined by the International Olive Council, keeps the aroma of fresh olives; refined "light" olive oils are neutral by design. In an olive oil cake the oil is the main flavor, so extra virgin is the point. Lumìa's red apple, a ripe, rounded fruitiness, sits naturally next to lemon, orange and almond.
3. Know What Oil Does to the Crumb
Crumb, the soft interior of a cake or muffin, stays moister with oil than with butter, because olive oil is liquid at room temperature and coats the flour evenly. Olive oil cakes are known for staying tender for days. What oil cannot do is hold air the way creamed butter does, so very light, airy butter cakes keep their original fat.
4. Know the Swap: Butter, Vegetable Oil, Olive Oil
Substitution, replacing one fat with another, follows a simple rule. Butter in the U.S. is at least 80 percent milkfat, the rest mostly water, so use about ¾ the amount of olive oil: ¾ cup of olive oil for 1 cup of butter. Replace vegetable oil one for one. The swap works best where a recipe calls for melted butter; keep butter where it is creamed with sugar or cut in cold, as in most cookies, biscuits, flaky pastry and buttercream. Unsure? Replace half the butter with olive oil: you keep butter's lift and gain olive oil's flavor and tenderness. For more, read olive oil instead of butter.
5. Bake Where Lumìa's Flavor Belongs
Pairing, matching the oil to ingredients that suit it, is where Lumìa earns its place: lemon or orange olive oil cake, almond cake, dark chocolate brownies, oil-based chocolate cookies, olive oil muffins with citrus zest, rosemary focaccia and pizza dough. In bread dough, add the oil near the end of kneading, once the gluten has formed, at about 1 to 3 percent of the flour weight, or 10 to 30 grams per kilogram; Lumìa's pepper is best where the oil is meant to be tasted, as in focaccia, rather than in a plain loaf where the wheat should lead. For focaccia and bread, see our olive oil for bread dipping and olive oil for pizza, and for the story of America's favorite topping, read where pepperoni comes from; for olive oil over dessert, see our olive oil for ice cream.
6. Check the Harvest Date and the Bottle
Freshness, the time between the olive harvest and the day you open the bottle, shows up in a cake, where stale oil tastes flat or waxy. Lumìa comes from the Fall 2025 early harvest and recorded 0.13% free acidity, a peroxide value of 3.00 meq O₂/kg and 564 mg/kg of total polyphenols at milling, in a 500 mL dark-glass bottle. These numbers do not measure taste; they show the oil started fresh. See our low acidity olive oil.
7. Consider Origin and How Much You Need
Quantity, how much oil a recipe uses, matters in baking: many olive oil cakes call for ¾ to 1 cup, about 180 to 240 mL, close to half a 500 mL bottle. Choose Lumìa, 100% Italian extra virgin olive oil selected by a family with olive groves in Palma di Montechiaro and Pozzallo, Sicily, when the oil is the flavor; for large everyday batches, a less expensive olive oil may be more economical. For savory bakes, a few drops of our Black Truffle Oil or White Truffle Oil over warm focaccia after baking add truffle aroma; they are for finishing, not for the batter.
How to Swap Butter for Olive Oil in 4 Steps
- Measure: use about ¾ the amount of olive oil, for example ¾ cup for 1 cup of butter, or 3 tablespoons for 4.
- Mix wet with wet: whisk the oil with the eggs, sugar and any liquid instead of creaming butter. Because butter is partly water, some bakers add a little extra milk or liquid, about a quarter more.
- Add flavor partners: citrus zest, almond, vanilla or chocolate carry Lumìa's fruit and pepper well.
- Bake and rest: bake as usual and let the cake cool fully; olive oil cakes often taste even better the next day.
Tip: olive oil also greases the pan. Wipe a thin layer inside with a paper towel, dust with flour and tap out the excess.
Quick Questions About Olive Oil for Baking
Can you bake with extra virgin olive oil?
Yes. Extra virgin olive oil works in cakes, muffins, brownies, quick breads and focaccia. It gives a moist crumb and, unlike neutral oils, a flavor of its own.
How much olive oil replaces butter in baking?
Use about ¾ the amount: ¾ cup of olive oil for 1 cup of butter. Replace vegetable oil one for one. The swap works best in recipes that call for melted butter, not where butter is creamed or cut in cold.
Will olive oil make my cake taste like olive oil?
With extra virgin olive oil, yes, a little, and that is the point of an olive oil cake. Baking softens the oil's aroma and pepper; Lumìa adds fruit and a gentle bitterness that suits citrus, almond and chocolate.
Is it safe to bake with extra virgin olive oil?
Yes. Extra virgin olive oil is widely used in cakes, breads and focaccia, and the batter itself stays much cooler than the oven: most cakes and breads finish baking at an internal temperature of about 180 to 210 °F. Heat softens the oil's aroma, so choose a flavorful oil when you want it to be tasted.
