Ingredients (serves 3)
- 6 slices of wholegrain bread
- 1 ripe avocado
- 2 eggs
- Extra virgin olive oil , to taste
- Salt, to taste
- Black pepper, to taste
- Fresh white truffle (Tuber magnatum Pico) , to taste
Method
Boil the eggs until hard. While the eggs cook, peel the avocado and slice it thinly. Once the eggs are ready, peel and slice them thinly as well.
Toast the bread slices in a pan or toaster until golden and crispy.
Assemble the toast by layering the avocado slices first, then the egg slices. Drizzle with extra virgin olive oil , season with salt and black pepper, and finish with shavings of fresh white truffle.
