How long do black and white truffles last?

White truffles are best used within 5–7 days, while properly refrigerated black winter truffles generally last 7–10 days. Freshness varies, so assess aroma, firmness and appearance rather than relying on time alone.

Can you freeze fresh truffles without losing flavor?

No. Freezing can preserve black truffles for later use, but some aroma and texture will be lost. If necessary, freeze them airtight and grate or shave them directly from frozen. White truffles are best used fresh.

Does truffle oil need refrigeration after opening?

Not every commercially bottled truffle oil requires refrigeration. Keep it tightly closed in a cool, dark place away from heat and sunlight, and follow the storage directions printed on the bottle. Refrigeration may make an olive-oil base cloudy or partially solid, but this usually clears at room temperature.
